In 2016, Guilhem and Corinne Sevin took over the destiny of Maison Christian Etienne.

The heart of our restaurant beats to the rhythm of the seasons. They decide the moment... the moment when each offering, harvest or product finds its place in our cuisine. A cuisine in motion, generous, natural, subtle, full of nuances and whose main desire remains "flavors", full of spirit and meaning. Above all, taste.
Between January and March, chef Guilhem Sevin puts the spotlight on black truffles, pampering you with incomparable flavors.
La Maison has preserved many of its historic features, which can still be seen today on the walls and ceilings of the restaurant, which are adorned with painted decorations of ermines and fleur-de-lys. The fresco in the main dining room dates from the 15th century. The house coat of arms is depicted above the 16th-century reception desk.
The building remains an essential pillar supporting the façade of the Grande Audience and Grande Chapelle halls, with the counterfort wall present in the Petit Salon.
Today, the energy transmitted by the Palace of the Popes lends a comforting atmosphere to the House, with Corinne SEVIN ensuring a warm welcome and comfort for guests, and Chef Guilhem SEVIN delighting your taste buds and selecting the wines to accompany your gastronomic moment.
